Soymilk, an aqueous extract of soybean, is becoming more and more popular as consumers become more health conscious and seek out alternatives to dairy products. Soymilk is treated as a healthy food because it is cholesterol and lactose free, and contains phytochemicals.Consumption of soymilk is primarily increasing among those consumers who are lactose intolerant, vegetarian and seeking healthier diets.Furthermore, there is a real interest among consumers in soymilk in the form of dried powder. A dry powder product is highly desirable since it not only possesses long shelf-life, but also requires relatively low transportation cost and storage capacity and the product can be distributed over a wide area.
A collaborative research project entitled “Studies on the application of membrane technology for production of instant soymilk powder” was undertaken between M/s Bio-Nutrients (India) Pvt. Ltd., Bhopal and ICAR-CIAE, Bhopal in which a process has been developed for production of instant soymilk powder with improved colour and reconstitution properties. The process consists of pre-concentration of soymilk, spray drying of concentrated soymilk at optimized conditions, and finally agglomeration of soymilk powders in a fluidized bed dryer.
The optimized conditions of the process parameters based on research results was adopted by M/s Bio-Nutrient that helped the firm in producing improved quality soymilk powder and better market acceptance as a minimally processed protein powder. Consistently the M/s Bio-Nutrients (India) Pvt. Ltd., Bhopal has worked in collaboration with ICAR-CIAE, Bhopal for producing high quality Soymilk powder. At present the firm is producing around 100 tons of soymilk powder per year and marketing at an average price of Rs. 225/- per kg of soymilk powder.
There is huge potential for manufacturing and export of good quality soymilk powder from Madhya Pradesh, especially by M/s Bio-Nutrients (India) Pvt. Ltd., Bhopal, being the leading producer of soybean in the country. The production of high quality soymilk powder with the consistent efforts of M/s Bio-Nutrients (India) Pvt.
