ICAR–NMRI, Hyderabad secures patent for innovative method to authenticate cold-slaughtered chicken meat

ICAR-National Meat Research Institute, Hyderabad has achieved a significant scientific milestone with the grant of an Indian patent for its novel invention titled ‘A Method for Authentication of Meat from Cold Slaughtered Chicken.’ This innovation represents a major advancement in ensuring meat quality, authenticity, and consumer protection.

The patented technology is based on a proteomics-driven strategy, leveraging advanced analytical techniques to identify heat-stable hemoglobin-derived peptide biomarkers specific to cold-slaughtered chicken meat. By employing targeted mass spectrometry, the method enables accurate discrimination between cold-slaughtered and freshly slaughtered chicken, and robust validation suitable for regulatory and industrial applications.

The foundational work has been peer-reviewed and published in Food Chemistry and British Poultry Science. This achievement highlights the continued commitment of ICAR and ICAR-NMRI towards innovative research, translational science, and societal impact in the domain of meat science and food safety.
